An almost-bankrupt small brewery with 200-year history with declining sales abandons mass-produced brand “Asahi Fuji” and re-focus all its company-resources to create the best “Daiginjo” grade sake. Dassai brand achieved the highest milling rate of rice and rebuilt the perception for sake both in Japan and in the world. They reinvented the traditional sake-making and started year-round production in an effort to provide freshest sake possible to consumers.
