The grapes for this wine are grown on the Estate vineyards in the Barossa Valley. Single wire trellising, low cropping level and an ideal ripening season allowed the grapes to mature to their optimum ripeness. Barrel matured in medium toasted American oak using 30% new barrels in the blend. Fermented at 25 – 28c, twice daily rack and returns into open vats increases the oxygen contact during fermentation. Optium skin contact defines the soft tannins and gives structure on the palate.

Forest berry fruits with oak spice nuances and minty notes.
Palate
Flavours of forest fruits follow through to palate, dominated by black currant which is perfectly matched to cigar box oak from small percentage of new medium toasted barrels. The balanced tannins and fruit weight result in a gratifying length of flavour.
Wine
The 2015 vintage provided elegant wines with structure and balance. Low yields and even vineyard ripening provided great flavour depth and some firm prominent tannins which have softened during maturation. This stylish blend makes an impressive companion for grilled T-bone & Fillet mignon.
