The fruit was harvested during the evening at
low temperature. This helps to preserve
primary fruit flavours.
This wine was fermented in high tech, stainless
steel tanks at 11˚C. Low temperature
fermentation is essential to retain as much
primary fruit lift and colour as possible; a
necessary strategy for this sweet, fresh
white.
Our Wild Bouquet Moscato gets further
special treatment. We halt the fermentation
process at about the half way point to ensure
original fruit sugars are retained as well as its
existing ferment ester characteristics
We use a distinctive yeast strain for this wine:
QA23. This is a Portugese strain that is
especially suited to the fermentation of fresh,
fruity white wines.
